I've got a few overripe bananas I need to use today.  I've never been really happy with the recipe I've used over the years.  Care to share yours?

Here is mine - it is an old one:

1/2 cup butter
1 cup sugar
2 eggs
3/4 cups walnuts
4 bananas
2 cups flour
1/2 tsp soda

Cream butter and sugar and add eggs.
Sift flour and soda together. Add to sugar and egg mixture
Mash bananas good and add mixture, using the bananas for liquid.
Add nuts and stir
Bake in a loaf pan for 1 hour in moderate over (around 325)

I've got a couple of recipes around somewhere; I'll try to dig them out and post them tonight.  Now, it's off to plant more bananas...well, but the weed trees in preparation for planting next month.....

I dug around in my recipes...and didn't find anything Huh  Maybe my kid ran off with it when he worked at the bakery.....

If you use one jar of babyfood bananas in addition to your regular bananas, your bread will attain a heavenly aroma!  That one jar doesn't add much for taste, but the smell is wonderful!!!

If you're interested in another recipe to try, I can add mine to the mix. It makes one large loaf in a Bundt pan, or two regular loaves.

BEST BANANA BREAD


1 c. soft butter, or oil (I use butter)

2 c. sugar

2 ts. vanilla

2 ts. lemon juice or cider vinegar

4 eggs

4-5 ripe bananas, mashed

1 ts. salt

3 ½ c. flour (this is very good made with whole wheat flour!)

2 ts. baking soda

2 ts. baking powder

1 c. sour cream

1 c. chopped nuts


Pour into greased Bundt pan. Bake at 350* for 1 ½ hrs. Cool in pan. This
 always gets raves from everyone. Very moist. Drat, now I want banana bread! Will have to ask Jeff to get some bananas on the way home so I can let them sit out and get brown.

Here is mine. I got it before college, which was nice, because it was amazing how impressed girls were when
they see you can cook...

3 ripe bananas  - well mashed      
1 teaspoon salt
2 eggs – well beaten         
1 teaspoon baking soda
2 cups flour               
1/2 cup coarsely chopped walnuts
3/4 cup sugar               
12 oz. Semi-sweet chocolate chips

Preheat oven to 350. Grease a loaf pan. Mix bananas and eggs together in a large bowl. Stir in flour, sugar, salt and baking soda. Add either nuts or chocolate chips. Pout batter in pan and cook for 1 hour. Remove from pan and cool on rack.

It's a family favorite.  I'm big on modifying until it's a one bowl recipe, and here's what we have.  I don't ubermash because I like coming across banana bits from time to time.  I'm new so I get a waiver for being so late.

Chocolate Chip Banana Nut Bread:

2 cups whole wheat flour
1 tsp baking powder
½ tsp baking soda
½ cup sugar
2/3 cup walnuts (crush)
2/3 cup mini chocolate chips
1 tsp vanilla
3 large ripe bananas
½ cup butter (stick)
2 eggs

-Mix flour, baking powder, baking soda, sugar, walnuts, choc chips, vanilla
-Add mashed bananas, softened butter, eggs
-Mix to batter consistency.
-Add to greased loaf pan
-Preheat oven to 325°, allowing mixture to set during preheat
-Bake 65 minutes, then 15 minutes at 350°

Make sure to use very overripe bananas.  It seems to make quite a difference.  I recently discovered the joys of using a cast iron loaf pan.  The results are wondrous.  If cast iron is used, one must compensate for the heat retained by the cast iron.  Once the trick is learned, the results cannot be matched by any other pan.  Some day I hope to find a large cast iron loaf pan.  The large cast iron loaf pans are not manufactured today.

I add about a cup of chopped dried apricots to my banana bread and get raves. Adds a sweetness.
