I am supposing canning garlic is a climate thing.  I plant a bunch late fall, harvest late spring, and repeat.  You could call it earth canning.  They spend the winter in the ground.  I am not ahead of the curve, however.  I still need to buy extra starts to supply a ginormous need, let alone swallow my pride and buy even more at the farmer's markets from time to time. 
I have been known to chop it up, smash it in a jar, and cover with good olive oil, which keeps really well refrigerated.  But I haven't done this in a while.  I know reefered is not long term.

They are selling right now for a dollar a jar, I got a couple different kinds a couple weeks ago. I think it's on sale. Lately, if it's on sale, and there are 3 in-a-row-wide, I buy what I can. Yes, not as good as home canned. My mom spooked me on the botulism thing and I've not yet recovered.

I found a pickled garlic recipe, but it was water bath canned. Vinegar in it, and a bit of sugar. Is that enough to prevent botulism? Or should it be pressure canned?



it is a pickled product.  The low pH from the vinegar is enough to prevent botulism, the same as pickled cukes.

I left out the sugar this year and they tasted better.  Used the dill pickle recipe. yum.

Yeah, I found two recipes and I'd definitely use the one with 1 tBsp of sugar vs. the 1 cup recipe.  Tongue

Yesterday I bought a sewing awl and it came with 2 needles and 30 yards of waxed thread.  What I'll use it for I don't know but it looked like it could be useful.  Got it at Hobby Lobby with my 40% off coupon. LOL  I just can't stop prepping my house is filling up!.

Today we are cutting up and vacume packing a deer my son got this morning.  Now that feels good!  I know what to do with this!

I had no idea you could can garlic.  I bought a ton recently at costco and was planning on slicing them and then dehydrating.
I might try the canning method sounds better.

forgot one other thing.  I got $100.00 worth of nickles on Thursday at our local bank.  Had to order them the day before.  James Rawlings suggested saving them, he said that some day in the distant future they would be worth a bunch more money.  He thinks they will stop making them soon.  So save those nickles.

Not being close to stores is the only down side of moving for us.  Hopefully this spring we will go back to the country. Right now I live very close to everything .  Can go to Hobby Lobby and Michaels every day and even walk easily to the grocery store with those coupons if I wanted.  This would be a good place to stay if the only bad thing that happen was gas going sky high.  But I'm not so sure we'll be that lucky.  We just know we like the country better so that's where we're headed.

worked on security at our place today. Replaced an outside door to the front porch with a new door  not a screen door. Secure and weatherproof also much better for winter! In the last two weeks we have put in a security light and improved home security. It seems to be an area of weakness.... so working on it. The house is secure it more about mental attitude for me.

Hubby has been deer hunting with a bow for the last 4 weeks (maybe 6) and deer hunting with gun started here today.... let's hope he get's one! The kids are waiting on the jerky.

Spread the wealth -- shopped at two local middle eastern markets, one alpine deli, and the liquor store.  Decided to skip a purchase at Baxter's Auto Parts, will wait until I get to Bi-Mart (a regional store).  Fed 7 hungry football fans a dinner of  chicken tandoori, rotated basmati rice, broiled onions & tomatoes, and pita bread with hummus, under $20.  (THAT is home security, young men who know where they'll be fed.)

Also, a note for Skepticus, I saw middle-eastern canned herring, I think the brand was Sultan's.  No doubt highly desirable for herring collectors!

There are two Ball recipes.  Best to go to their web sites and download them lest I accidentally infect y'all with botulinism!

Both can be done with water canning.

One has oregano and a chile pepper, one is just white vinegar/pickling salt but both are DIVINE!

Personally, I am buying up all the fresh veggies I can get my hands on and canning like a mad women.

BTW:  There is some article I heard about on the radio about how humans can't distinguish more than 4 tastes at a time and about how all that hi-falutin gourmet and wine tasting are completely bogus.  Say it ain't so!
