Just got this book from the library. 

I was pretty disappointed and really happy I didn't buy it.  I was looking specifically for bean recipes that did not need meat - virtually all the bean recipes required meat with them.  For example, if I am living off my canned goods, I am not sure how I would find a ham bone for a bean recipe.  I also did not like how most of the recipes called for things like eggs without a discussion of alternatives to eggs such as adding extra liquids, replacing with cornstarch, etc.   Most of the recipes were pretty basic and not too much different than what you would find in a generic cookbook.  There were some pioneer type recipes.

It does have some nice conversion charts and a few recipes made from dried vegetables.

I bought the book.

At first I thought the same thing you did, but in time I realized despite it's drawbacks, there were many good ideas in it.  Be creative.  Use your imagination to vary up some of the stuff.  there is also a section about substiting other things that you'd probably have on hand for meat, butter, etc. etc.,
